Teacher Gifts (only one day left for school:))
This year I made cupcakes for all of my teachers to celebrate the end of the year.
I made four different flavors: Double chocolate, Vanilla lemon, Turtle, and S'mores.
For the double chocolate I used Ina Gartens Chocolate Ganache Cupcake recipe which i got from the Vanilla Sugar blog - click here for recipe
My next cupcake recipe, I matched a vanilla cake recipe from the food network kitchens with a lemon glaze from a barefoot contessa cookbook. the vanilla cake is great and the glaze complements it wonderfully. vanilla cake- I didn't use the meringue frosting though, instead I used this lemon glaze:
mix together 3 1/2 tablespoons lemon juice and 2 cups powdered sugar
Then I dipped the cupcakes in the glaze and garnished them with a mint leaf and a candied lemon zest after that, let them cool until the glaze hardens on the outside.
next comes the turtle cupcake. I call it the turtle cupcake because it is a chocolate with caramel cupcake with a sea salt buttercream frosting and for some reason people call it "turtle" when chocolate and caramel are mixed together. any way i used the same cake recipe as the double chocolate cake but added 3/4 cup of homemade caramel sauce when i was about to put the batter into the muffin pans. I got the frosting from sprinkle bakes. After the cupcake cooled i took this lemon juice tube thing (see below)
and stuck it down the muddle of the cupcake twisted it, and (usually) the little cylinder of cake came out perfectly! i then drizzled caramel into the hole, and put the cylinder of cake back into the hole and frosted over it, so you would never even know until you bit into it that there was caramel in it! if you want to put a lot of caramel in it, tare a little of the end of the little cylinder of cake so when you put it back in, caramel doesn't gush out (even if it did though it will still taste good so who cares (: )
s'mores cupcakes come next, i followed the recipe from Annie's eats, here it is... s'mores cupcakes:)
