lemon chicken lettuce wraps with skinny noodles

i usually don't have lettuce wraps when i go to restrains and all but we have had a lot of shredded chicken left ore foam my brother's grad party so i decided to try something new! 



I love chicken with lemon so i decided that i should definitely use lemon chicken with something but what should i put it on? i have been having chicken on a bun lately ('cause we also have had ALOT of buns leftover) so i have gotten sick of them. So i (somehow) came up with lettuce wraps. one of my favorite vegetables is spinach (i don't sound so picky now, do i?) but i always like it cooked (it is so cool how it cooks down to like, nothing) so my mama and i decided to throw some of that in there too. At restaurants like P.F. Changs, they have those little rice noodles (the ones that taste like cardboard) so i decided to throw in some of my favorite noodles. i love capellini (SUPER THIN) noodles from the brand De Cecco. they only have to cook for two minutes (it is so cool) and they are done.

all we did was make the noodles then put them in a bowl

undo the iceberg lettuce so they formed cups

sautéed shallots then added already cooked &shredded chicken 

added the juice from a lemon (or so) 

mixed in spinach and cooked until the spinich got really small

and that was basically it
